Ricotta is a soft Italian cheese with a mild, naturally sweet flavour, traditionally made from the whey left over after producing mozzarella. This whey, rich in protein, is gently reheated with a little fresh milk added to restore creaminess. From here, acid is added, which causes the remaining proteins to coagulate into delicate, fluffy curds. Since it’s made from whey and doesn’t involve the use of rennet, ricotta isn’t technically considered a “true” cheese in the strict cheesemaking sense. Did you know the word Ricotta literally translates to “recooked” in Italian? Referring directly to it's production method.
The curds are strained in baskets to create Ricotta’s signature light, fluffy texture, making it a versatile ingredient enjoyed fresh on toast with honey, used for pasta fillings like ravioli and lasagna, or in indulgent desserts such as cannoli and ricotta cheesecake. Loved for its freshness and adaptability, Ricotta knows how to make dishes naughty or nice, perfect for high protein healthy meals, and works equally as well in cheeky desserts.
